To me, this week is so special...
because I am going to do something which I've never done before....
That is : making chocolate!
As you know, chocolate is made from cacao right?
After last video(cooking tutorial about cacao with condensed milk and crushed ice)
I dried the cacao seed which I ate ( white part of cacao pulp only)
And this is the dried cacao bean after 1 week.
The white part was disappear completely by dehydration...
only remain the seed.
From dried cacao seed, through few processing, I'll
make cacao powder...
then make chocolate from cacao powder.
Althought I searched many tutorial about making chocolate...
the gap between tutorial and reality is quite far....T.T
Let's see if I can succeed to make chocolate!
First of all, I will : ROAST CACAO SEED.
I'm gonna roast cacao seed using frying pan.
It takes 20-30 minutes to roast cacao seed completely...
up to heat level what you use.
I'm using medium heat, and it takes 23-25 minutes.
Roast until it swells...
and can remove the skin easily...
to take out the cacao bean...
Turn off the heat.
Cacao bean can be burn the skin when you are roasting it...
Don't worry, later you will remove the skin.
Transfer the seed into a bowl, cool down...
and remove the skin.
Use knife to remove the skin easier...
Cacao bean has black color and brittle...
It's not hard as i thought.
Before I think cacao bean is hard as others bean.
Because it's brittle, you can use blender to grind it into powder.
Let's grind cacao!
Add cacao bean...
OMG!!!
Huhu, i didn't join the jar with blades perfectly...so it come off T.T
Try again.
You will grind it until...not powder perfectly...
Because using blender, it can't grind the cacao bean to powder as flour grinder
So just grind cacao bean as fine as you can.
Continue until you grind all cacao bean you have.
What you have now is cacao powder!
Here!
Let's start to make chocolate. I will use 220 ml milk...
Add cacao powder.
100% pure cacao powder :D
Mix well.
Pure cacao powder can be too bitter, so I will add 1 tbs sugar.
However, can it help to reduce bitterness? huhu T.T
Then mix well
Simmer the mixture in low heat. Keep mixing or cacao mixture can be burn on bottom.
Simmer around 20-30 minutes
The mixture will be thicken
After 20 minutes...
and color will be darker.
After 30 minutes, It will turn into a chocolate chunk
and secrete oil...
which turn the cacao mixture into solid, not liquid anymore
For aesthetics, Ill make it into small balls :D
Small balls are not only cute but also easy to eat.
Thanks to cacao oil,
you can make it into balls effortlessly.

So I have just made...
CACAO (CHOCOLATE)!
It's really nice experience to me...
when i cook cacao mixture...
I can smell chocolate taste around of me.
Maybe because i used only pure cacao powder with milk, and no any additive
So when cacao mixture became solid, it secrete some kind of oil....
which help me to make chocolate into sharp easier.
Big chunk is difficult to enjoy, so I make small balls...
It looks glossy and cute :D
I hope the taste will be fine...
I'm not expecting it can be as good as brand chocolate actually.
but...maybe...not that bad right?

I added small amount of sugar only...so...BITTER!!!!
It's sooooooooo bitter...really it's pure chocolate...
just...BITTER!
But strangely, it bitter at first, but little sweet later.
One bite, you can feel bitter taste in your mouth...
then after few minutes, you will feel sweet little.
I have no flour grinder at home, and...
using blender can't make fine powder.
So when you eat, you can feel little rough
but not so serious.
It's soft but not smooth...
If i have to rate the taste, compare with brand chocolate...
cacao chocolate can be 6/10 point (in my opinion hehe)
Of course brand chocolate must be better...
because making chocolate need some additive...
However, the cacao chocolate taste is...
unique and natural...(?)
If you don't have high requirement...
eating handmade cacao chocolate is quite interesting...
It has its own charming, not the same as chocolate what you can buy outside!
the taste is original, simple and natural...
It's handmade advantages...100% handmade!
By cacao oil,...
cacao mixture is sticky.
Cacao chocolate structure is similar as chocolate truffle.
It's soft as that.
Aww...so bitter.
Because I just add little sugar...
You can eat cacao chocolate with cake or sweets something...
It's really good match.
Overall, I succeed to make chocolate, although it's not good as I expected...
not bad.
Should i wrap presents and give it to my friends?
In summarize,
I have succeeded to make chocolate!
I give it 6/10 point compare with chocolate in supermarket.
At home, of course we can't make really nice chocolate...
At chocolate store, they have nice ingredients, full equipment to bring out full aroma and flavor...
I just make chocolate really simple, and only use equipment what i have at home.
So homemade cacao powder is not fine...
and no specialized equipment.
The taste is "strange"
it has chocolate taste but not as the one I bought in the stores.
"Handmade" taste.
Taste is not weird, don't worry.
If I have chance, I want to try other provinces cacao...
because cacao in different areas have difference taste.
I used Ben Tre province cacao. Next time, I'll try cacao in...
*** Nai, Ba Ria - Vung Tau or Dak Lak.

and check the differences.

If you have a chance, try to make cacao chocolate at home. It's easy...
Follow these steps, first dried cacao seed...
for 1 week until the white part is dehydrated.
then roast cacao seed.
until you can remove the skin easily.
Grind cacao bean using blender...
to make cacao powder. Finally, add milk or butter or additive ( as vanilla extract )
You can make your own chocolate!
