Hello this is Chef Sean Roe on behalf of expertvillage.com and the last thing that I like to discuss
is doneness especially in America there as been a lot of culture about cooking things
well done and fish is one of those stigmas where people always want to cook there fish
overly to get rid of any food borne illness. Though if you buy your fish from a creditable
prevare and it is fresh fish does not have to cooked all the way you could always cook
fish to a medium to a medium rare even. Some fish are better like better then other. Sushi
grade fish are fish that are caught and are cleaned and could be eaten basically raw like
su like it says sushi grade. That is wonderful for maybe tunas. Always important not to over
cook your fish because there is very little connective tissue and the more you cook a
fish the more it would fall apart on you. So you always want to make sure that you cook
it just to the point where it stays together and does not fall apart. So as long as you
fish is fresh and from a creditable place like a creditable supermarket you should have
no problems cooking your fish to a under well done. Thank you very much.
