Today's recipe: Dukan Salted Caramel Flan, with cinnamon and cardamom.
Tastes like heaven!
I'm using 1 green cardamom pod for this recipe: this is it.
Open it with your fingers, tearing off the shell. Inside the pod you'll find this tiny seeds,
which can go from golden brown to black. They are so aromatic than the seeds of
just 1 pod are enough to add flavour and aroma to 2 cups of milk.
We are going to use only the seeds, ok? You can throw away
the shell.
Now, the recipe: place 2 cups / 500 ml skim milk in a medium sauce pan,
add 5 sugar free toffe caramels ( sugar free werther's original
would be just fine)
1/2 cinnamon stick,
and the cardamom seeds (not the shell)
Bring to a shimmer, stirring to prevent
the caramels to stick to
the bottom of the pan and burn.
Then turn off the heat, set aside and let rest
for 5 minutes.
To make flan without eggs, we need unflavoured gelatine.
1 pouch /envelope of unflavoured gelatine or grenetina
(as they call it
in South America)
or 6 gelatin sheets will be enough
for this recipe.
Place the gelatine (or grenetina) in a medium bowl and cover with 8 tablespoons
of water (about 75 ml) If you are using gelatine sheets,
cut them into stripes, a little trick to help them
bloom faster.
Stir and leave it to soak for 5 minutes.
So far, following the recipe steps was easy, right? Well,
now it gets even easier. Wait and see.
Lets pour the milk hrough a fine mesh strainer
and into the bowl.
we are using the strainer to remove the cinnamon
and the cardamom seeds. Hey, wait a minute!
Where's the cinnamon stick?

oh, my! It was stuck to the bottom of the sauce pan!
Here it is now.
So, the gelatine is dissolving into the hot milk,
now we are adding 6 oz / 175 grams of fat free cream cheese
to make this dessert really creamy. By, the way,

I'm whisking to get a nice and smooth cream,
I'm doing it by hand, but you can use a blender.
Keep whisking until the cream
has no lumps. Then, add
1/3 teaspoon sea salt or kosher salt,
and sweetener to taste, about 1 or 2
tablespoon.
Use your favourite sweetener:
saccharin, stevia, splenda...
wichever you like the most.
Divide the cream between molds and refrigerate until set
(small molds, 2 hours. big molds up to 5)
With soft
silicone molds it's better to place them on a tray
before filling them with the cream and
them take the tray and the molds to the fridge.
This way you won't spill the cream all over your kitchen floor.

To decorate the flan, I have used grounded cinnamon,
sugar free caramels and some powdered instant coffe. I also made
a low carb,
sugar free caramel syrup by placing 1/4 cup of water, adding 2 sugar free
coffe caramels, in a sauce pan over medium heat
stirring until they are dissolved into the water.
Add some sweetener and
you are done!
