So this is Triple Wood, and Triple Wood is basically an extension of the Quarter Cask
range, the sister brand. And what we do is we basically have the two maturation's in
American oak and then we triple mature it in European oaks. So big sherry butts, so
we get a nice kind of sherry finish influencing the spirit here. What that does, we have first
fill sherry and we have re-fill sherry. So the first fill sherry for one year and re-fill
sherry for 2 years. Then they're combined together at bottling and we'll bottle at 48%
alcohol and it's non-chill filtered as well. So if we go to the liquid, a nice bright gold
colour. On the nose first, the initial burst is the sherry sweetness just gentle though.
Very kind of grapey rather than full Christmas cake sherry. Behind that you do get a kind
of custard-ness coming through from the two American oak maturations as well. A lot of
spiciness and it almost feels nutty at the back end as well. On the palate, a lot of
these flavours on the nose, on the palate as well. Huge peatiness though that wasn't
so much on the nose comes through on the palate. Great body, a lot of spiciness with the three
maturations in oak so gentle saltiness as well. A nice lingering creamy finish going
kind of citrus-y, maybe orange citrus as well. And that's Triple Wood.
