Hi, my name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you
how to make a great holiday lamb rack with roasted new potatoes. So, I've got my potatoes,
and I've also got my roasting pan right here which I'm going to put my potatoes in when
it's done. Now what I'm going to do, stir this around, and I'm just going to do the
potatoes, just a few at a time, just to make sure everything gets nice and evenly coated;
and just kind of roll them around and stir them, this way all your potatoes are going
to get a chance to get fairly even amounts of seasoning; so just add a couple in at a
time, and just keep stirring them around until you see that they're all evenly coated, there
we go; add a few more to the mix. And you know the rosemary is not going to completely
stick to them, it's potato, it's not like it's soft on the outside, like a loaf of bread,
where rosemary will stick to the outside, if you're baking it, like a dough or something;
let's add the last few in. If you want you can add a little more oil to this just to
make it a little more easier to toss, I just don't do that because then I think you're
introducing to much oil in there. And also it's really important to make sure these are
dry before hand, because if not what happens is the water will actually repel the oil,
and you won't get the oil to coat the outside, so you'll end up with a dramatically different
end result, which is not good. Let's take our pan, drop our potatoes straight in there,
now I want to; I have a spatula here for a reason, you'll see why. I'm just going to
go ahead and tap out as much of the, you see, you got some of the seasoning stuck on the
brush, and once I got all that tapped out, I'll take my spatula, then I'll just go around
the inside of the bowl, collecting up all of that seasoning and herbs and just kind
of drizzling that over the potatoes, just like that. Just go and give it a shimmy, get
a nice coating in the bottom; there we go. We're good to go on our potatoes, so we're
going to set these aside for the time being, doesn't matter where you put them, just somewhere
out of the way, and we'll be back to those in just a moment, and now let's move on to
our lamb.
