Hi, this is David for Expert Village. Today we are going to make coq au vin. Now that
we have our pan heated with the oil here and we have our bacon chopped, it does not have
to be to fine, what you want to do is get the flavor in and here is what we are going
to do. Just grab the simple bacon. What we are going to do here is just render the flavor
from the bacon to the oil here. So you may want to start off with a really hot pan and
then turn it down to medium high. Move it around and everybody would taste this in the
recipe; this is awesome. Go ahead and get that going. This does not have to get really
crispy or anything just somewhat in between. You don't want it really loose but you also
don't want to stringy or anything. You can see the oil for the bacon fat coming out.
