Let's make vegetable patties.
For this recipe you first have to soften the dried mushrooms by soaking them in water. Drain them when they have softened enough.
Finely chop the spring onions and the mint.
For this recipe we will use Poliana olive oil. Heat the olive oil and sauté the onions first.
Now, sauté the mushrooms.
Chop the carrots and sauté immediately after the mushrooms.
Let's prepare the beer batter now.
Place the beer and the flour in a bowl and mix until a smooth batter is formed. Make sure the batter is not too runny.
Add the mashed potato to the batter, and stir.
Mix in the chopped mint. This recipe is ideal for vegetarians because it only contains vegetables.
Season with salt and pepper and mix well. If you want a more spicy flavour, you can also add chopped sun-dried tomatoes.
Finally, once you have sautéed all the vegetables, combine them to the batter and mix them all together.
Spread some olive oil on a baking pan, so that the patties do not stick to it, as they cook.
Shape the patties with your hands and arrange them on the baking pan.
Bake the vegetable patties at 150 degrees, using the fan control, until golden brown.
Serve them hot or cold as an appetizer or together with a delicious cold salad.
