Today we will prepare Chena kheer.
It is also known as Chenas payas.
It is a bengali recipe.
It is a delicious sweet made using rasgullas and milk of thick consistency.
So come, let’s make Chena kheer.
Ingredients required to make chena kheer.
1/2 litre full cream milk to make chena and 1 litre full cream milk to make it thick.
In total we have taken 1.5 litres milk.
Sugar (Cheeni) - 1 cup It will be used to boil the rasgullas.
Powdered sugar (Powdered cheeni) - ¼ cup (To be added to the thick milk)
Lemon juice - 1
Saffron threads (Kesar) - 15 to 20
Green cardamom (Chhoti elaichi) - 4 to 5
Pistachios (Pista) - 7 to 8
To make chena kheer, first we’ll prepare the Chena.
On one side we will boil the milk to prepare Chena.
On the other side we will boil the remaining milk on low flame, so that it has a thick consistency.
Turn on the stove.
The milk is boiled.
Turn off the flame.
Keep the milk aside for 3-4 minutes and let it cool.
Now add the same quantity of water to the lemon juice.
Let the milk cool down.
If we add lemon juice in very hot oil, then the chena will not be very soft.
Keep the milk aside for 3-4 minutes and let it cool.
Keep stirring the milk that is kept at the other side after every few minutes.
Peel off the cardamom and make a powder.
Cut the pistachios into thin pieces.
Let's cut this, till our milk is boiled.
Once the milk is cool, add lemon juice to it.
Stir it.
The curd will separate from the whey and you will get Chena paneer.
Do not put any more lemon juice.
Now we will filter the chena.
Take a cotton cloth and filter the Chena.
Squeeze it tightly.
The water that has been separated from the chena can be used to make dal, curry or
even to knead a dough, as it contains all the essential vitamins and minerals.
Pour some water on top of the chena. This will wash away the flavour of lemon.
Now press the cloth this way to remove all the water.
We have squeezed the chena properly.
Take out the chena in a plate.
Knead the Chena in this way to make it soft. Press it with your fingers.
Knead the Chena for about 5-6 minutes to make it soft.
Our chena is now soft.
Now make small round balls from the Chena.
On the other side, let’s prepare the syrup for the rasgulla.
Add 1 cup sugar to the cooker.
Now add 2.5 cups of water to it.
Let it cook till the sugar dissolves in water completely.
By the time the syrup gets prepared, let us make the Chena balls.
Keep stirring the milk after every few minutes.
Cook the milk till it gets thicker and the level decreases.
Make sure the milk does not stick to the bottom of the pan.
Make sure to stir the milk properly till the bottom of the pan.
Make small round balls of Chena this way.
Make them round this way.
You can make 60 balls from this much Chena.
The sugar is completely dissolved in water.
Now add chena balls in the cooker to the boiling syrup.
Cover the cooker.
Wait for 1 whistle.
After this, turn the gas on medium flame and cook the rasgulla for 10-12 minutes.
We can also make the rasgullas in an open utensil, but it will take a little longer.
Boil the rasgullas for 20 minutes.
The whistle has come. Turn the stove on low flame.
Rasgullas are made good when the syrup is boiling hot.
7 minutes are over, turn off the flame.
Let it remain in the cooker till all the pressure is gone.
Stir and check the milk.
It is quite thick now.
We cooked the rasgulla for 12 minutes after the whistle came.
Now turn off the flame.
We will remove the rasgulla once the pressure of the cooker is gone.
The pressure of the cooker is over so now separate the rasgulla from the syrup.
Our rasgullas are ready.
Leave the rasgulla aside to cool and then add them to the milk.
Remove the cooker from the stove.
Now separate the rasgulla from the syrup.
Add the rasgulla to the milk.
Now add the Chena balls to the milk and cook for 5 -6 minutes on low flame.
Our chena kheer is now ready.
Put the chena kheer in a bowl.
Garnish the chena kheer with pistachios.
Chena kheer is now ready.
Tasty chena kheer is finally ready.
Keep the chena kheer in the refrigerator for an hour.
Chena kheer is delicious when served chilled.
