PA: Hi guys! This is Paolo from Vallerosa Bonci,
today with Mr. Giuseppe Bonci owner of the Winery for 50 years now, agronomist and winemaker in our cellar.
I really wanted him to join us in this tasting because I would like him to give you some informations about some of the gems from Verdicchio available from you catalogue, the sparklers.
So ... What have we got here ?
GB: This a Sparkling Verdicchio done in the Charmat Method
also known as Martinotti
basically two names for the same vinification method
one French and the other Italian
so we will stick to the Italian and call it Martinotti
It's a fresh wine coming from a long fermentation in autoclaves
that ranges between 4 and 6 months
It's suitable as an aperitiv but also wonderful for the whole meal
especially with sea food
PA: Good! And what about the Classical Method ?
GB: We start from a high-quality wine base
and we leave each bottle fermenting on the yeasts from 36 months at least.
It's a small production of around 10.000 bottles
that we don't repeat regularly but just in the right vintages
and I consider it as

I honestly try not to define it as a Champagne
because ... honestly ... it's better !
