What's different about a chef sandwich
is that usually when inside, going in the sandwich are
ingredients that was destined for a plated meal
grab a piece of bread, which is a great ingredient, has a lot of flavor. So you end
up with
something that's a little bit less traditional. It's really a different way
of presenting
a meal.
Our first bakery was opened in 1992
in Cape Cod. And at the time everybody was making raisin pecan or raisin walnut.
and we decided to put a little twist on it using
local sun-dried cranberries, cape cod cranberries. Jeffrey and Sisha,
we would do tastings and they tasted the cranberry pecan and from there they
loved it and they wanted to do something with that bread.
They were like oh this is great bread, but would like to make a sandwich of it
and the way you make it, we are having a lot of ways. So,
she came to me and she said this is what they're asking me to do, to make
an even square loaf that they will have no waste at all. I said
we're not doing it...and I was wrong, they were right. Because of the 'wichcraft
we started this little artisan sandwich
line that is now, after 10 years, a substantial part
of our business. So, Thanks to 'wichcraft.
