Hi, my name's Kip, and I'm here on behalf of Expert Village. Today, we've been making
a New York style cheesecake. Our timer just went off, and it's time to remove our cake
from the oven. The cake should be quite tall, and maybe even taller than our pan. Look at
that. It will shrink as it cools. What we want to do is let it cool, and then put it
in the refrigerator to let it cool some more before we serve it. Here's our cheesecake
that we've just taken out of the oven. It's still quite warm. As you can see, it can wiggle
a little bit. It will actually deflate a little bit as it cools. What we're going to do now
is let it cool, probably for a half an hour or so here on our counter, and then we will
put it into our refrigerator, and let it cool the rest of the way. We want to serve cheesecake
cold. Typically, not just room temperature, but from the refrigerator. We're not actually
going to remove the ring until its come down to that particular temperature from the refrigerator.
