Dinner tonight is going to be a quick, simple and easy to prepare affair
a pasta dish relying just on: Pancetta cubes,
pasta, obviously, eggs, cream
and Parmesan. Some might call it a Carbonara, although traditionally speaking
it's not a Carbonara recipe
but what ever you want to call it, very simple to do...
first thing you need to do
is put the cubed Pancetta into a dry frying pan
relatively gently heat it, so the fat renders off
and the Pancetta starts cooking in its own fat
carry-on cooking until it's lovely and crisp
whilst the Pancetta is cooking slowly
in a bowl or jug
break-in
eggs
pour in some double cream
grate in some parmesan
have your pasta
cooking at this point
when the pasta's done
drain it
put it into a saucepan
with the er... crispy cubed pancetta
pour in the mixture of grated parmesan, cream and eggs
heat this mixture again until the sauce begins to thicken. You can just see it coming
to the thickness of a custard and once it's at that point
you're done
