Today on The Stay At Home Chef I'm showing you how to make Strawberry-Chipotle BBQ Sauce.
It's sweet, it's smokey, and it has all the flavor of my favorite fruit:
Strawberries!
Now this is something we make right here on our stovetop
so we'll go ahead and get started by heating up
2 tablespoons of olive oil
over medium-high heat.
Then add in a roughly chopped sweet onion.
Saute this until the onion is soft and translucent which will take about 5 minutes.
I like to use a sweet onion in this recipe because
I love the flavor that sweet onions add.
But you can also use a plain white onion or a plain yellow onion instead.
Next up, once these are soft and translucent we're going to add
3 cloves of crushed garlic
Give this a quick stir.
The garlic needs just a minute to toast and then we're going to add in
2 teaspoons of ground mustard
and 1/2 teaspoon black pepper
2/3 cup brown sugar
1 tablespoon Worcestershire sauce
1 cup ketchup
and then 4 chipotle in adobo peppers that I've roughly chopped.
Give this a quick stir.
Last up we'll add in the star of our show: the strawberries.
I've hulled all of my strawberries
so they are ready to go right into the barbecue sauce.
Reduce the heat to medium low and let this simmer for about 10 minutes.
After 10 minutes it's time to blend it all together
and I'm going to use my handy-dandy immersion blender.
Stick this in and start blending it.
If you don't have an immersion blender just transfer this to a regular blender and puree it until it's smooth.
Once it is pureed, cover it with a lid and let it simmer for another 10 to 15 minutes
to let those flavors really meld together.
You can serve this up anywhere where you'd normally use barbecue sauce.
I'm serving mine up on some slow cooker baby back ribs.

be sure to let it cool for a bit before you put it in a storage container.
