Hello. Today, I am going to show you how to cook sea bass. I should get pan fried it. Now, I got the pan on the glove and I
got just little amount of vegetable oil in that. I don't want to keep it too much in
it and I want to keep it nice and greased and I don't want the pan too hot, otherwise
it will burn. But I will sit down to put some lines into the fillets or I shall put some
cuts on the fillets just to ensure that the fillet's not done too badly and don't stick
on the bottom of the pan. So, nice temperature, turn it up a little bit and I am going to
lightly season the fillet with little scone pepper, little bit of black pepper on either
side of the fillet. I am going to cook the skin side down. I will tell you why. You put
those in the pan and turn the heat up. Now, what will happen is as you can see, is the
fillets are uncooked at this moment. But as soon as it starts to cook around the edge,
what I will do is flip it around and cook them on the other side. It is only going to
take a minute and a half to cook so I am going to wait for sometime. So, the cooking has
been gently going on for about forty seconds to a minute and you can see it has gained
a white color all around the edges, so what you can do is to just flip them over. Then,
it will carry on cooking probably about another thirty seconds to three quarters of a minute.
So, what I will do is take it out of the pan and put it on the board and give it half a
minute and then put it on the plate and that is literally there to it which is quite simple
to pan fry. The secret to presenting nicely is snatching them up on the top. So I have
pan fried it and what you could also do with the fillets is you could lay it on the bed
of lemon and roast it up in the oven probably about six minutes on a hundred and eighty
degrees and alternatively you can make a bag out of tin foil and put a little bit of white
wine in there, scrunch it up in two hundred degrees and you can poach it for twenty minutes.
Finally, you can just tie the sea bass, stuff the cavity full of lovely things and just
rub a bit of olive oil on it and roast in the oven for about half an hour. So, I have
shown you at least four ways of cooking sea bass.
