Hello! This is Marcos Blanco, head Chef at Casal Santa Eulalia.
We would like to share with you the preparation of a dish.
For this recipe we will use Christmas-seasonal products
and specially very fresh from our garden.
We have here a home made turron-cream,
some semi-dried fruits in Oporto-wine.
Dried apricots, plums, chestnuts,
candied pumpkin,
extra *** olive oil flavored with citrus fruits,
a few herbs from our Garden
And a chocolate-compact.
These is our suggestion for setting the dish:
first we spread the turron-cream, prepared as indicated in the recipe,
around the bottom of the dish, sparingly.
Then put the semi-dries fruits,
you can chose the ones you prefer.
If you don't like these that we suggested,
you can replaced them forother fruits such as raisins.
In the center of the plate we put the candied pumpkin,
We've previously cooked the pumpkin with water, sugar and butter.
Now we add the chocolate.
It has a mousse-like texture, but is a stronger flavour,
so you can prepare the dish up to one hour before serving.
Finally, we decorate with fresh herbs from our garden,
In this case we have here some lemon thyme, mint, peppermint and sage
Then a little bit aromated olive oil,
Olive oil goes well with chocolate.
We conclude the dish with some slices of crispy organic bread.
