Puri is a very popular north Indian bread prepared on special occasions
Urad dal puri tastes very delicious, today I'm going to make Mixed Urad Dal Puri
Lets see the ingredients required for making this
For this we'll need
Whole Wheat Flour - 1 1/2 cup
Washed Urad Dal - washed and soaked for 6 hour in 8 times water
Garam Masala - 1/4 tsp
Coriander Powder - 2 tsp
Red Chilly Powder - 1/2 tsp
Asafoetida - 2 pinch
Salt - 1 tsp
Fennel Seeds - 1 tsp
Oil - 3 tbsp
Water for kneading dough
Oil for frying
Lets start making puri
Make a smooth paste of dal using a blender
Add a little water
Dal paste is ready, now add all the spices
Now add whole wheat flour
Mix well
Make a hard dough of this by adding little water at a time
Dough is ready, now cover it and let it rest for 10 minutes
Its been 10 minutes, now check the dough
Dough is ready
Grease hands with some oil
Make lemon size balls of this dough
Now smooth these balls with your palm
Similarly make all the balls and cover them
All the balls are ready, it makes around 30 balls
Now heat the oil in a wok / kadhai
check the heat by adding a tiny ball of dough, it it floats oil is ready
Grease the rolling board and roller with some oil
Place the ball in the center of rolling board
Now roll it into a circle of about 3 inch light handedly
It should neither be too thick nor too thin
Turn gas to high, and place the puri into the oil
Press it with a skimmer
It is puffed, now take it out from the oil and place it on a plate
Turn heat to high
Place puri in the oil
It is puffed, take it out and place on a plate
Similarly roll and fry about 3-4 puri
Now put the previous single side fried puri into the oil
Fry from both the sides until golden brown
Dal mixture will be cooked properly by frying it two times
Urad dal can also be stuffed instead of mixing with dough, for this you

Take out the puri and similarly fry all the puri
Keep th gas medium
Similarly make all the puri
Mixed Urad Dal Puri is ready
These are very crispy
You can serve it with aloo sabzi, pumpkin sabzi and raita in lunch or dinner
