Hello, it’s nice that you tuned into thuskochtour again.
Today I got a beautiful motive cake for you. It is a communion cake for my daughter.
This cake is made out of 3 different cakes.
The dough base is a sponge mixture for all the three cakes filled with peach-cream quark, raspberry buttercream and a coffee-cream.
The outside is coated with ganache.
In today’s video I won’t show you how I baked and filled the cakes or how I made the ganache, because today I only want to show you how to decorate my communion cake and otherwise the video would be too long.
Of course you can find the exact amount of ingredients on my blog.
On the first day I made the three sponge cake bases , so called Wiener Böden, in two 25x25 tins, 18cm and the last 2x in a metall bowl with a diameter of 12cm.
Then I wrapped them in cling film and left it over the night.
First I cut the two square bases into halves.
Now coat a kappa board with ganache and put the first base on top.
Then fill each bases with the peach-cream quark.
After the cake being filled, put it into the fridge for approx. 1h.
Then coat the cake with the first layer of ganache.
The first layer helps the crumbs to bind together and therefore doesn’t have to look perfect.
Then put it in the fridge for another 15min.
After 15min take out the cake and coat the cake with ganache, this time neat and properly, and put it into the fridge for approx. 30min.
Meanwhile I will fill the second middle cake.
Cut the dough two times and fill with raspberry cream and let it cool.
Then coat with dark chocolate ganache.
Put into the fridge for approx. 15min and then begin with the second ganache layer.
Finally fill the last cake.
Because of the globe shape of this cake, I won’t cut the cake, but fill it with coffee cream.
Then put it into the fridge for approx. 30min and coat it then with the dark chocolate ganache like the last ones.
After everything being cooled in the fridge, I will cover the first undermost cake with vanilla fondant by dekoback.
Here I cut out rectangular pieces and will fix them with baking spray.
Now coat the second middle cake with white fondant and finally also coat the last global cake with white fondant.
Now I will start with the decorations and therefore you need:
Pizza cutter
Brush
Balltool
Sugar glue
CMC
Modelling pad
Knead the fondant with CMC and roll out thinly and then cut out 2cm thin stripes with the pizza cutter.
Roll out the edge with the balltool, coat with sugar glue and fix the stripes as frills.
Continue until the whole undermost cake is covered.
Coat the middle cake with palmin and powder with gold powder.
Stick some cake-pop sticks into the undermost cake so the cake gets a better hold and put the second cake on top.
Put the global cake on top and begin with the decorations.
Knead the fondant with CMC, roll out and stamp out with a petal stamp.
Roll out the petals at the edges and put it on cup shape bit of aluminum foil for drying.
As soon as they get solid stick them to the cake from top to bottom.
Finally stick golden sugar globules into the middle of each petal.
