In todays show I talk about new business models of bars, restaurants and coffeeshops in the UK and Europe.
In London, the first pay-per-minute cafe has just opened its doors.
Ziferblat is a coffeeshop where you pay for the time spent.
Based on a popular concept originated in Russia,
you're given a clock at the door.
Internet, coffee, biscuits...everything is free. You only pay 3p a minute. The equivalent of less than 1 Brazilian cent.
The communal atmosphere ensures nobody will take advantage of the freebies.
This concept reminded me of De Culinaire Werkplaats, an art studio and a vegetarian restaurant
in Amsterdam. The relationship art-food is reflected in the colours, textures and taste
of a diverse range of ingredients. There's an open kitchen in the heart of the restaurant,
where customers can observe what the chefs are preparing, learn how to mix textures for
the best taste and even have a quick nibble. The menu changes every week.
The business model is very simple. There's no fixed price, except for the self-service glass of wine.
In the end of your meal you pay what you think is worth it.
Mixing the concepts pay-as-you-want and all-you-can-eat the bar Weinerei in Berlin
offers an original wine tasting session... You pay 2 Euros for the glass and can drink
as much as you want. In the end of the night you pay what you think your experience was worth it.
In my opinion the community concept needs to be implicit in your business DNA.
It's not just about opening a cool coffeeshop with a different concept that will attract hipsters and media
thinking this's going to be a success. That your idea might fall into the hype.
