Now I already showed you how to make pasta that is hollow. Now this dye is going to make
rotel pasta otherwise known as twisty pasta. But this has a little bit of a trick to it
because the pasta comes out straight if you want it to have a characteristic twist you're
going to have to do that yourself. So you want to go a little bit of the pasta out not
too much because you still want to be able to work with it and then when you cut it off,
this might be a little bit too short. But it's good enough to get the picture when you
cut it off you put it down to dry, you want to twist it. This will give you the characteristic
twist of this type of pasta. So you just want to twist that when you put it down to dry
then when it dries, you're going to have a nice shape that you want for the rotel pasta
though it helps if your knife is not sticking to it. If you're having problems with your
knife sticking to your pasta you should probably clean it off or you can also put a light dusting
of flour on it. When you're finishing up your pasta one thing to remember when you're extruding
it through the pasta maker, the bottom dye is going to come out faster than the top one.
Just because it have gravity on its side so if you want everything to be the exact same
size you might have to cut the bottom first then push a little bit more through before
finishing off the top ones. This is really a minor point if your pasta isn't exactly
the same size, it's not going to matter while you're cooking it the important thing is that
you don't have one or two inch long pieces of pasta being cooked along with ten or eleven
inches of pasta cause those are definitely going to have different cooking times.
