There are two main philosophies for making wine
The first one is Terroir - one tries find the expression of a particular vineyard with one grape variety
The other one is assemblange. The idea with this wine Costera - is an assemblange in the Bordeaux style
This is an assemblange with 80 - 85% Merlot with some Cabernet Sauvignon and Cabernet Franc as well
With the Cabernet Sauvignon and Cabernet Franc that both mature a bit later
we bring a bit more acidity into the wine and a bit more tannins
and my hope is that it matures then longer in the cellar but that still remains to be seen
