Hi my name is Lori with Figs Catering in Austin, Texas on behalf of Expert Village today we
are going to show you how to make a entire Thanksgiving meal. For our Thanksgiving meal
we are going to go ahead and do green beans but instead of doing our traditional green
beans casserole we are going to do fresh green beans with caramelized onions. It is a little
bit different and a little bit healthier as well. So first we are going to remove the
stems, blanch and shock the green beans and then we are going to slice the onions nice
and thin. Then we are going to make caramelized onions with a little bit of olive oil. Whenever
you blanch and shock green beans what you are going to do is you basically going to
cook them to there are a nice bright green color and still have a good firm texture to
them. You shock them in cold water to stop the cooking process and it would help set
that nice bright green color instead of having them turn that ugly army green color and that
is what blanching and shocking does. for caramelized onions what we are going to do is slice some
really nice and thin and we are going to cook them on low heat for about 30-45 minutes so
it does take some time. But it is really worth cause you really get a really sweet onion
that goes on top of your green beans.
