Hi my name is Karl James owner of Creolesoul Catering located in Round Rock, Tx and on
behalf of Expert Village I'm here to show you how to make Boudin. Here we have our boudin
and what I'm going to do now I'm going to take a little needle here and I'm going to
poke a few holes in the casting and this is so when we steam them the skins will start
to tighten up and we don't want them to tear so we're just making little small pin holes.
Like I say we're just using a needle because it's so small I mean we don't want big holes
we just want a little bit little bitty holes, pin holes so that like I say once we get steamed
these we don't want them those casting to burst open this will allow the for expansion
and the steam to come out anyway so we have our pin holes poked in and I'll see you at
the next step.
