Hi and welcome to Top Stove with me Titli Nihaan.
Today I'm gonna try and answer a question that I get asked a lot.
"What is golden syrup?"
Well, it's a sugar syrup that's golden in colour.
and I appreciate that's not very helpful to you.
But in order to tell you what golden syrup is
I need to talk to you about sugar.
And to do that, requires some science.
Now the manufacture of golden syrup starts off
with this stuff.
Just ordinary, simple, table sugar.
The sugar that you get from sugar beet or sugar cane is called sucrose.
Now to make golden syrup, this sucrose molecule is split apart to give 2 other sugars:
glucose and fructose.
The interesting thing about glucose and fructose is that
they don't crystallise very easily from the syrup.
So they stay in syrup form.
Not only that but fructose is a lot sweeter than
either glucose or sucrose.
Which means, you need about 25% less golden syrup
than you would do sugar to achieve the same sweetness.
And if that wasn't good enough,
there's also 25% less calories in golden syrup than the equivalent weight of sugar.
It's a double bonus!
Right, that's enough science for one day.
So, the next question is, "Where can you get golden syrup?"
Well, "Lyle's" is the original golden syrup and it is available worldwide.
Although depending on where you live,
you probably have to go into specialist shops to get it.
But there are other brands of golden syrup which are available.
You might recognise some of these brands, depending
upon where you live.
"King" brand syrup isn't really golden syrup because
it contains some corn syrup but it's pretty close.
But if you simply can't get golden syrup, what can you use instead?
In baking, honey is a reasonable substitute.
But if you don't like honey, you can use a mixture of
2 parts light corn syrup with 1 part molasses.
Golden syrup finds its way into all sorts of recipes like:
treacle tart,
treacle tart, treacle sponge pudding,
treacle tart, treacle sponge pudding, pecan pie
treacle tart, treacle sponge pudding, pecan pie and
even chocolate fudge cake
So I hope you now know the answer to the question, "What is golden syrup?"
It's simply a sugar syrup.
