Squirrels are plentiful in Missouri, and the hunting season is long,
so there's lots of opportunity to enjoy something that's both delicious and versatile...
...like my squirrel country sausage!
Remove all the squirrel meat from the bones and grind or chop using a food processor.
The leg meat is full of tendons and doesn't always grind easily, but will be fine-chopped with a food processor.
Mix this meat with fresh pork sausage.
Mince onion and garlic. Cook the onion until it's transparent, then add the garlic and saute slightly.
Mix together the meats, onion and garlic, parsley, margarum, basil and other herbs.
To make sure the seasoning is the way you like it, form one small patty and cook it.
Taste test the sausage and adjust your seasonings to your preferences.
Package and freeze the meat in meal-size servings.
When you thaw it, form it into small patties to cook or grill or use with your favorite sausage recipes.
The best thing about squirrel country sausage is that it can be used for any meal.
It's great on pizza...or you can scramble it into your breakfast eggs or serve it with waffles!
