Today, we will make Sweet & sour mango kadhi.
This is a specialty of Gujarat, Maharashtra.
Let’s start making the kadhi.
1 sweet Mango.
¼ cup gram flour.
½ cup curd.
1 cup chopped green coriander.
1-2 tbsp oil.
8-10 curry leaves.
1 pinch Asafoetida.
½ tsp ginger paste.
2 green chillies.
1 red chilli.
Less than ¼ tsp red chilli powder.
¼ turmeric powder.
¾ tsp salt (according to your taste)
Firstly, peel the mango and take out the pulp.
We have taken out the pulp remove the seed.
Cut it into small pieces so that it’ll be easy to mix it in the mixer.
Put it in the jar.Add curd and gram flour.
And mix them well.
Add 3 cups of water.
The solution is ready now, prepare the tempering.
Heat the pan, put half of the oil and save half of the oil to put it on top.
When oil heats, add half of the cumin seeds, Asafoetida, green chillies.
We have cut it in two long pieces, so that whoever wants to eat it can eat.
Add red chillies, turmeric powder, curry leaves and ginger paste.
Fry it a little.
Now add kadhi’s solution.
Stir it continuously until there’s a boil in the kadhi.
Increase the flame.
There’s a boil in the kadhi. Now add salt to it and coriander leaves.
Let it cook for 6-7 minutes and stir it time to time within 1 minute.
We have cooked the kadhi for 7-8 minutes in low flame.
The kadhi is ready. Take it out in a bowl.
Now give it a finishing touch.
Add the remaining oil and heat it.
Add cumin seeds, curry leaves and turn off the gas.
Add red chilli powder and add this finishing to the kadhi.
Sweet & sour mango kadhi is ready now.
If you want to make a sweet kadhi then you can add sugar also.
It can serve upto 3-4 people.
You serve it with chapatti, paranthas and rice.
