We are going to make a Mexican meatball soup. We will be using 1 pound of ground beef. 1 cup of rice, 1/4 cup of chopped onion, 1 teaspoon of mint, 1 teaspoon basil, 1 egg beaten, 1 can of diced tomatoes.
1/4 cup chopped onion, and 1 clove of garlic. Also, 2 carrots sliced, 1 zucchini sliced, and 2 potatoes.
We are going to be mixing all the ingredients by hand in the bowl. You can use gloves for this if you prefer.
We make an opening in the meat in the middle. And we add the onion, rice, egg, mint, basil, and pepper.
Now that we have all the ingredients in the bowl we mix by hand.
Here we are going to make the soup base. We add to the blender, a cup of onions, a clove of garlic, and tomato.
Now we have blended the base. To the large saucepan we add 2 tablespoons cooking oil.
We pour in the base. We will boil this for 5 minutes. On a low heat.
We have now boiled our base for 5 minutes, we are going to add 6 cups of water.
Here we add the 6 cups of water, if you prefer you can add chicken broth.
Now that we have the water added and boiled for 3 minutes, we are going to make the meatballs.
You can make the meatballs smaller or larger than these.
After we have made all our meatballs, we will let this boil for about 15 minutes, on a medium heat. You can add salt to taste.
These have been cooking for 15-20 minutes, and need a little more time. I'm adding 1 teaspoon basil. We'll cook a little longer, then add the vegetables.
After about 30 minutes cooking time, we are adding the vegetables. We will also be adding the potatoes. We will check this again in 15 minutes.
Now we are checking to see how the meatball soup is coming along. It needs a little bit more time.
Now we are going to add the zucchini and the potatoes. We are timing this so it all comes out cooked completely. At this point we will check it again in 15 minutes. Total cooking time will be around an hour.
After 15 minutes, we check it again. Now it is ready. The total cooking time was about 60 minutes.
Now the meatball soup is ready to serve.
