Welcome to my kitchen! In this episode, we'll make raw almond milk.
This recipe is well liked by parents as well as children.
Raw milk can be made from sprouted wheat, sesame, sunflower seeds, or various nuts.
We can also make it from rice, as I've shown you in a previous episode.
Nuts should occupy a prominent place in our daily diet, because they contain essential fatty acids -- good fat.
If we consume essential fatty acids, we won't get fat. On the contrary, they'll help us get slimmer.
This is a cup of pre-soaked almonds. You can soak them for a few hours or overnight.
Soaking helps them come to life, and makes them easier to digest.
In this bowl we have 10 dates. We'll also need water, about a liter of water.
If you'd like the milk to come out warm, you can use warm water, up to 40 degrees Celsius in temperature.
For a more distinctive taste, you can add cinnamon, cloves, carob, vanilla or rum.
I'll use a Vitamix blender today. It's a very good blender, one of the best in the world,
We've been using ours for a LOT of years, that's why it looks old.
Let's add the almonds and the dates into the blender.
If your blender isn't as high-powered as a Vitamix, make sure to pre-soak the dates for at least an hour.
Pre-soaking will make it easier for your blender to cut through them.
Let's not forget the water -- about a liter of it.
If you'd like your milk to be thicker in texture, add up to twice the amount of nuts I used here.
Just know that if you do that, the texture, as well as the taste, will be thicker and stronger.
To filter the milk, you'll need a bag like this, which you can find on my site. It's a cinch to filter it with this.
You can also use fine gauze, folded twice or thrice, if you don't have one of these bags.
This bag is tailored to fit perfectly over the head of the blender.
This is how the milk is filtered. Also look at its color and texture -- the same as cow milk.
Make sure to hold the bag well, so it doesn't fall into the bowl.
Just a little more and it'll be done.
Almost ready...
If you're asking what I'll do with the pulp -- it won't get thrown away.
We'll use it either for some raw bread, or a raw cake -- but that's for the next episode! :-)
Don't forget you can mix in your favorite spices, like carob or vanilla, to give it a special taste.
You can keep raw almond milk in your fridge for 2-3 days, in a glass container.
