Nicole Carignan Lefebvre: In 2000, I sat on the Municipal Council as elected councillor
of Vieux-Saint-Eustache. I was also asked to be part of the Board of Directors again,
which I did. At a certain point, I realized that the festival had grown and that there
were lists, not lists, but a lot of people lining up to get galettes. At one of the meetings
of the Board of Directors, I said: “We, may be, the city councillors, could help and
have our own stand behind the manoir Globensky.” Indeed, since that time, I would say, since
when? 2002? 2002 maybe. My memory is failing me. In 2002, yes, the city councillors came
and cooked the galettes during the festival. We took turns. Our spouses participated also
because we needed people, friends but also volunteers that were there since the beginning
of the year 2002 let’s say. They came and helped prepare and serve the pancakes. And
it’s been like this since 2002 I would say.
