We are going to prepare red mullet fillets, marinated and fried,
with a Sainte-Foy-Bordeaux wine - Sweet Bordeaux.
In this recipe, we need
a pan in which we will put all the ingredients:
water, vinegar, lime, sugar,
spices (star anise, liquorice), thyme, Java pepper or Jamaïcan pepper.
You heat all of this together until it boils during 3 minutes
and then, you pour it on the red mullet fillets.
We now prepare a small filling with crushed tomato,
dried tomato, olives, parsley, a branch of celery and celery leaves.
A little bit of salt and pepper.
We add a little bit of olive oil and we mix.
This filling will be put on the fillets at the end.
Now, let's take the vegetables:
shallots, yellow pepper, red pepper, zucchini, mushrooms,
and put everything to heat, during 3 minutes max.
When it's hot, pour it overtop
Once the fillets have marinated during some time,
we dry them a little and we put them in a hot pan to fry them on one side.
We are going to put the vegetables.
But before that, we add candied lemon.
We put the fillets on the vegetables.
And to finish, we add the cold filling.
Some Espelette pepper for color and taste.
