(music) ceasar salad is an american classic with as many versions as there are
restaurants but one of the great things about the original is that it has just
the right combination of tangyness and creamyness in the dressing
that unique flavor and texture comes from two things raw eggs and anchovies
so when i opened my own restaurant i went to work on creating a one
hundred-percent vegetarian dressing
another one of my favorite parts of a good caesar salad
tasty crutons and i always make mine from scratch
preheat your oven to about three seventy five and take your most favored whole
grain bread and cut into one fourth to one-half inch cubes
i'm going to use a good quality olive oil and my favorite herbs and you too can use
your favorite herbs
sea salt of course
and a little bit of pepper
dill, rosemary, basil,
and then on the mix this up that seems like such a small amount of oil but it's
amazing how it will really coat
the croutons and the oil will coat the bottom of the
pan when its baking and
i bake these for about twenty minutes
and so they're nice and crispy and can start to smell them that's usually when i know
that they're done our salad calls for extra firm tofu here i'm going to use
silken tofu that's the vacuum packed tofu
that you find on the grocery shelf
and this is going to form a great base for the dressing
i pop this right in the blender
with olive oil of course lemon juice
and then a mayonnaise i prefer a good quality soy mayonnaise but for those of
you who don't worry about dairy feel free to use whatever mayonnaise you'd
like
i've just put in a little white miso
cloves of garlic and now this is a nutritional yeast that's going to give
it a really unusual flavor
that is egg like
and nutritional yeast is loaded with vitamins, all the B vitamins and it's
also very high in protein, the capers that's gonna take the place
of the anchovies
but the final ingredient is nori nori is the sea vegetable when you go to a
japanese restaurant and you have sushi nori is the beautiful black sea
vegetable
that surrounds the sushi
so i'd like to put the nori in
and let it just actually sit there for a couple of minutes and just sort of soak
in
to the mixture before i go back and blend it and the beauty of the nori
besides giving it
the flavor is that it gives it this beautiful color
nori is high in vitamin A, it's higher in protein in meat
mmm, i can smell it
take a little taste of it
mmm so good that is a ceasar dressing
i just simply go right across and cut
usually about half inch
cuts, and now for the great part
this wonderful caesar dressing we're not going to need all of
this and this is a great thing that will keep in your refrigerator in a jar with
a tight top for a couple of days
mix it a little bit before we throw in the croutons
so i'm going to sprinkle them
again that's personal preference how mant crutons you want to put on
and i'd like to top it off with just a little bit of capers
with this ceasar you can see how the silken tofu along with the
nori and the unique ingredients can bring the dressing to life! (music)
