Good morning. Today we will make a tart with almonds and pears
which are now seasonal fruits.
Let's look at the list of ingredients.
Here I have some pre made dough. It's a sweet tart base.
Like a crostata base.
Then 200 gr. of butter, 200 gr, of ground almonds,
200 grams of sugar, 4 eggs, and 50o grams of canned pears
which I bought and drained, and now are ready to go on out tart.
I will also use some bitter almond flavoring
which will add an even more interesting taste to our cake.
Here. I've put the dough in the pan, which will go in the oven.
Press it nicely

You can work the edges in this way so it will look
nice, when we put the filling.
I will put this in the oven now for about 10 minutes at 200 degrees
and leave it to cook well, I want the base to be well done
before putting the filling and the pears.
Here we go. With the fork you can prick it. Like this.
Then it goes in the oven. In the meanwhile we will make the cream.
Let's star with the cream. Let's start with the 200 crams of butter.
Cut it a bit so it will be easier to mix them.
It goes in the mixer and then we can add all the other ingredients together.
Here, we start with the sugar, so the butter
can form a creamy mixture with the sugar.
Now we add the eggs. One at the time.
We said 4 eggs.
At this point we can add two heaping tablespoons of flour.
I had forgotten to mention these in the list of ingredients
but we need them so the cream can thicken.
At the end we can add the ground almonds.
And we add a few drops of almond flavoring.
This will give it a wonderful aroma, just like marzapane.
The crust of our tart is ready and we can add the cream.
Let's use it all, just like this....
Now the pear...let's slice them very thinly
and then lay them on the cream
just like this, so the overlap a bit.
We are almost done. I like it when there are a lot of pears
so I'm going to use them all. You can also put them further apart if you don't want to use them all.
But, more or less, the quantity is 500 grams of pears.
The cake now is ready and it will go in the oven for 25 minutes at 220 degrees.
The cake now comes out of the oven. Is nicely golden.
Now I want to make it even more inviting and shiny.
For this I have taken some jam that I had in the house.
This is apricot jam. You have to choose a light jam
If you have pear marmalade, it could be perfect.
I warmed it up in the microwave for a few second
and now I'm going to brush it on top, to make it shiny
and even more beautiful.
Also on the pears, everywhere, brush the marmalade.
Can you see how shiny it is?
Tomorrow I will serve this with a bit of vanilla ice cream.
The pear and almond tart is finished. Shiny, fragrant and delicious.
