2. The farm: Pago Olive Oil.
The landscape of 'Las Valdesas' estate
is shaped by olive groves, a modern mill adjacent to them
and a typical Andalusian farmhouse,
a classic example of construction in the area.
In this mill we only grind the olives from 'Las Valdesas'
allowing full control of the quality of
our olive oils
from the growth of the fruit to its final packaging.
Therefore, the oil of 'Las Valdesas' is
what experts call 'Pago oil',
an olive oil elaborated
only with olives from the estate, or Pago
milled and packaged in the same property.
