his is Stephanie Manley with copykat.com. Today I'm going to show you how
to make a fabulous curried pumpkin soup. This is so easy to make. It's
great for dinner and it's very, very filling. You can do it in about 15
minutes. So there is no need to open up one of those red and white cans
when you can make your own soup from scratch.
So let me tell you what we are going to do for the soup. We are going to
saute some onions in a little bit of butter along with some curry powder.
Then we are going to add some chicken stock. So then we're going to add a
can of puree of pumpkin. This is not the pumpkin pie filling. That can is
much bigger than this one. So make sure you have just the puree of
pumpkin. We're also going to use a little bit of heavy cream here. That
will help thin out the soup and then we're going to finish it with a
squeeze of lime juice. So why don't I show you how to make this fabulous
curried pumpkin soup?
I have my pot on medium-high heat. I've added a couple of tablespoons of
butter and next I am going to go ahead and saute my onion, because I have
about a half cup of onion that's chopped. I'm going to add a little bit of
salt to this and then I'm just going to cook it until the onions are
translucent. This should just take a couple of minutes, and while this is
sauteing, I'm going to go ahead and add my curry powder.
I find that if I add my curry powder while food is actually cooking and
almost frying you get a much better flavor. So you're going to add just
about a half a teaspoon of curry powder. If you like curry powder more,
you can go ahead and add a little extra. So again heating the curry powder
up with the onions really brings out the flavor here. So when these onions
become nice and translucent we're going to go ahead and add in the
remainder of our ingredients.
So now our onions have become nice and translucent. We've let them cook
for just a couple of minutes here in the butter. The next thing we're
going to do is we're going to go ahead and add in our can of pumpkin puree.
Again, this is not the kind that you make pumpkin pie with, the kind that
says pumpkin pie mix. This is pure pumpkin. We're just going to kind of
stir this in and next, we're going to go ahead and add in a couple of cups
of chicken stock. I like to use a low sodium kind. This way I don't
accidentally over salt my food. We're just going to stir this and then I'm
going to add in a little bit of heavy cream. This just adds a nice bit of
flavor and gives the soup a nice texture. I'm going to stir this in.
Now the next step is purely optional. I have an immersion blender that
I'm going to go ahead and hit the soup with to make the onions nice and
smooth. You do not have to do this. OK and now we're going to continue
heating the soup until it's nice and hot and now I'm going to add in the
squeeze of lime. Alright and just bring this up to a nice, warm
temperature and you'll be ready to serve this soup.
So after cooking the soup for about 8 to 10 minutes, it's going to be
nice and done. You just need the pumpkin to cook just a little bit. You
will have a fabulous bowl of curried pumpkin soup. Please be sure to give
