Helen McMahon for Expert Village. Our meringue is ready now and we have our foil covered
cooking sheet. Now we’re going to take a spoonful at a time and just drop it right
on to the corner of the pan. These can go very close together. You don’t have to worry
about them spreading because they don’t change shape at this point when they go in
the oven. So they can be put together quiet quickly and you want to be sure that they
go on pretty fast. You can make them a little larger if you’ll like. If you can make a nice little kiss at the
top or little point that it comes to, that looks very attractive when it comes out of
the oven.
Just continue that until you have a whole tray ready to go into the oven. They can be nice and close. Sometimes you
can get a little swirl on the top that looks very pretty. These are festive cookies especially
for the holidays and they will stay this color. They don’t brown. They just stay the color
of white so it looks quite nice in contrast with other cookies that you may have on the
tray.
