Hi, I'm Brendan McDermott. I'm a culinary instructor and teach knife skills at the Institute
of Culinary Education in New York City. I also do some cooking videos with some friends
called Working Class Foodies, where we try and bring local and sustainable food and try
and keep it cheap for people who are trying to learn how to cook on a budget. I got into
cooking in high school. I started off as a dishwasher and working in restaurants, and
slowly started moving into prep and stuff. And then, I tried other jobs and a couple
years later decide that I wanted to really stay in kitchens. And I went back to... I
got into culinary school. That was about 12 years ago, and it's been nonstop. I have no
regrets about it, working in restaurants around New York and in the Bay area. I started teaching
about five or six years ago, which I really love because I get to learn as well as really
get to help people try and get to the place where they're comfortable with cooking. I
teach as Institute of Culinary Education basic knife skills and some meat fabrication. I
also teach at a place called Brooklyn Kitchen, The Meat Hook, in Williamsburg. So, if you
want to take any kind of knife skills classes or basic cooking techniques, you can find
me at Institute of Culinary Education or Brooklyn Kitchen in Williamsburg, Brooklyn. Today we're
going to do different kinds of fish fabrication and we'll do some preparation for some of
the bivalves like clams and muscles.
