Hey Cookaholics, Chef Kendra here and today we're making one of my favorite things. Fried
mushrooms. So easy to do and they're always such a crowd favorite so if you have a party
or something make a bunch of them because they go quickly. So, let's do what we do and
head to the kitchen and make it happen.
We have our ingredients chilling like a villain so the first thing we're going to do is get
our salt and garlic powder in our purple bowl, next is baking powder. Corn starch goes in.
Then we're adding all-purpose flour to our bowl and we're going to whisk this up a bit.
Whoa, guys we can't forget a several robust twist of our pepper mill now can we? The last
thing we're adding to our batter is water. So now we're just going to whisk the water
in.
It should be the consistency of pancake batter. How many times have you heard that. Now we're
going to set up our frying station. Our shrooms, batter,
and panko bread crumbs are all invited.
We're going to use a skewer I broke in half to dip the mushrooms into our batter, you
could also use a toothpick. This way you end up with less gunk on your hands. So as you
see, we dip the mushroom slices in the batter and then into the panko and then to our plate.
We want to do all of them before we start frying these boys.

OK, you want a nice coating on these but you want to shake off the excess crumbs. Once
all of them are coated we're going to slide the plate into the refrigerator until our
oil gets hot.
We're going to get our pan under medium heat and pour in our oil. I happen to be using
vegetable oil here but you can use canola oil. It's your kitchen do what you want. We're
going to let that get hot for 3 or 4 minutes.
Now we're going to fry 6 to 8 of these guys at a time. We're going to stir them around
a bit. Once they're golden brown and tasty we're going to take them out and get them
on a rack to drain. We're going to immediately going to salt them lightly.
You can serve them with all types of dipping sauces. Personally I like blue cheese, but
cocktail sauce works, ranch, and even some Asian style dipping sauces work. Use your
imagination guys.
