Hi, this is Josiah Owen with Expert Village. And today, we're going to be talking about
how to cook pepperoni ziti for those on a diabetic diet. And now we're going to talk
about chopping up our mushrooms for our pepperoni ziti and just going to get about eight ounces
of mushrooms. One -- a small pack. And we're just going to cut them into 1/8th to 1/4 inch
slices right down the side. Just move them over as you go. We want these pieces really
small. We don't want them too thick. We want them to soak up all of the juices and the
flavor we have going on later -- with the garlic and the oils and whatnot, salt and
pepper. And just push these to the side. And there you go, your mushrooms. All right, now
we're going to talk about our spinach we need for our ziti. We're going to make sure we
clean off our spinach first. We need about five ounces. You can get the pre-chopped,
pre-cooked if you want to. Or if you want to use fresh, that's fine. So we're just going
to bunch this together and slice through it. We don't want the pieces too small, but we
don't want them too big either. Like Mama and Papa bear, we want it just right. See,
these pieces are kind of big in the middle so we're going to go the exact opposite way,
but we're not going to completely dice it like our onions. So your pieces should actually
end up about that big.
