Hi I am Archana, in todays recipe I am going to show you how to make Pav Bhaji
Its one of the most popular recipes on my website
And a very popular street food from India
Pav bhaji is essentially a miss mash of vegetables
that is spiced up with pac bhaji masala and served with pav bread
So lets dive right in to see how to make this delicious recipe
below are the ingredients to make the pav bhaji
we will first cook all the vegetables in a pressure cooker
Into the cooker add in 3 peeled and diced potatoes
5 to 6 carrots that I have chopped up
Two cups of chopped cabbage
and finally a cup of cauliflower florets
to this add 3/4 cup of water
and some salt
Cover the pressure cooker and allow it to cook for a couple of whistles
whistle blowing
after a couple of whistles simmer for about 5 minutes and then turn off the heat
Once the pressure is released open the cooker and while it is still hot, using a potato masher mash all the vegetables until it is mushy and soft
once mashed keep it aside
we will now proceed to make the masala for the bhaji, add a tablespoon of oil into a heavy bottomed pan
grate 2 inch piece of ginger into the oil
you can also add a few cloves of chopped garlic, but i personally like it without garlic
add in one finely chopped onion
One large green capsicum finely chopped
and sauté on low to medium heat until the onions and capsicum have become soft and tender
this takes a good 7 to 10 minutes
after about 7 to 10 minutes of cooking the onions and bell peppers have softened and changed colour as well
at this stage i am going to add in the 1/2 a cup of the tomato puree
two tablespoons of pav bhaji masala
a generous tablespoon of chaat masala
a teaspoon of turmeric powder
and finally a teaspoon of garam masala powder
Stir to combine all the ingredients and sauté for a couple of minutes
once combined, add in the mashed vegetables into the masala
sauté the vegetables into the masala until it is well combined
I check the salt levels and felt the need for more salt and pac bhaji masala
do add them accordingly to suit your taste as the masalas we added earlier contained some salt as well
I like to add a large chunk of butter to give it additional flavour and richness
sauté and mash the pac bhaji in the masala for another couple of minutes and the pac bhaji is ready to be served
to toast the pac buns cut them into half you could use burger buns if you don't have the pac buns readily available
generously apply butter and toast them on a preheated skillet until it is crisped and browned
You can now serve the delicious Pav Bhaji on a platter
Sprinkle some steamed green peas and squeeze a dash of lemon
Serve the Pav Bhaji with freshly toasted Pav Buns for dinner with family and friends
perfect taste of lemon when squeezed on top of the pac bhaji is simply delicious
