Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on
behalf of Expert Village I'm here to show you a sweet potato pone recipe. Now we're
going to do a step which is one of the most important step and that is, we are going to
cream our butter and brown sugar together. We had the butter sitting out at room temperature
because you really want it soft. You don't want it to melt but you want it soft so we're
going to put our butter into our bowl. I'm going to take a knife to kind of cut it into
some little squares. Then add our brown sugar in there, we're going to use a hand mixer
I'm going to put it on about four. Then slowly move this around in there until it's creamy
(turn that down a little bit) basically what your doing is getting the butter to absorb
all that sugar. It will fluff up and aerate your butter. The sugar will cause your butter
to have little air holes, air pockets in it. Stop for a minute, let me get my little wooden
spoon in here so I can move these things down off the edges. You can do it by hand and it
will take you about five to ten minutes to do, but if you got a mixer it works really
well. So like I said it's the important part you want to get that butter nice and creamy
with that brown sugar in there. It will get airy and fluffy, so we'll continue to cream
our butter and the sugar mixture here and I'll see you back at the next step.
