In today's episode I'm going to be making, Tutti Frutti Cookies!
But we'll be making them a little healthier with this recipe!
instead of all purpose flour, I'm using whole wheat flour!
You can use all purpose flour too if you'd like
But since they're extremely addictive, I'm using whole wheat!
so that I can have them guilt free!
If you don't have tutti fruity, you may add in your favourite dry fruits
so without wasting more time, lets make eggless tutti frutti cookies, lets get started!
first, in a bowl, pour in your dry ingredients
I have used custard powder which gives these cookies a chewy texture
if you don't happen to have it, you can use corn starch, which is easily available
some salt and then sieve so that air gets incorporated and lumps don't form
in a separate bowl, room temperature butter so its soft
beat it a little bit
add sifted powdered sugar
Tutti frutti is already very sweet, so we'll refrain with the sugar a bit
cream the butter and sugar
till light, smooth and fluffy
orange essence will give the cookies a very orangy, zesty flavour
mix just a little bit
now we'll add in our dry ingredients, little by little
now we'll combine the dough with our hands
not too much of kneading, to avoid gluten developing
which will harden our cookies
now cover the dough with a plastic wrap
store in the fridge for at least half an hour
its important to cool it before cutting because of the butter we added..
if you don't however cool it then during cutting and baking
you will face challenges with the shape
and will spread unevenly while baking
roll it with a rolling pin
remove the plastic wrap
spread some tutti frutti from above and press gently with a rolling pin
when you start cutting, make sure you preheat the oven
cut with a cookie cutter and same with the leftover dough
place your cookies smoothly in the baking tray that you will have covered with butter paper
my cookies came out perfect in 14 minutes
if you bake for less, they might be a little too soft
if you bake for more, they'll be a little more crisp
do pay attention to your oven while baking, in 14-15 minutes they should be perfect
no one's gonna know they're whole wheat, trust me!
once they cool down, you can store in an airtight container room temperature
for at least 1 week
