Hey guys, Danny from Danny Mac's Kitchen good to see you as always
So it is just miserable outside it's cold and snowy and I am in a soup frame of mind
today So that's what we're making I'm going
to show you how to make a rocking tomato bisque from scratch
I recommend making it from scratch because I've had it in supermarkets and it sucks!
So easy to do, so flavorful, really excited Let's get started!
Real simple to make this is what you're going to need
32 ounces of canned chopped tomato 32 ounces of vegetable broth
1 onion chopped 6 ounces heavy cream
1 cup of white rice 2 ounces of garlic chopped
I have some yellow cherry tomatoes that I've diced up a little bit
Some chives chopped, we're going to use this for garnish
A pinch of saffron and we're going to be using olive oil today
So we're looking at 2 ounces of olive oil over medium high heat for about 45 seconds
Then we're going to sautee our onions along with our garlic for about 3 minutes
until translucent, give it a good stir give it a good coating
After three minutes add the vegetable stock, the tomato..careful not to splatter it all
over the place as I sometimes do Add the cream
My secret ingredient the saffron Only a pinch, a little goes a long way
And 1 cup of white rice this is going to be our thickening agent it's going to make
the bisque really silky and sexy Bring this up to a good simmer then
reduce the heat to medium and we're going to cook this for 25 minutes
We're at a decent simmer Lower your heat to medium low
At this point season with copious amounts of fresh black pepper
And salt Good stir
Cook for an additional 20 minutes be sure to stir though frequently as
the rice will settle to the bottom and has the potential to burn
It's been 20 minutes Turn off your flame
I'm going to be a little naughty and I'm going to add some cayenne pepper
which is optional of course Give it a stir and at this point
grab yourself a hand mixer and we're going to puree this until it is absolutely smooth
I do believe we are ready to plate I like this to be nice and thick
If it's too thick for you, you can always thin it out with some additonal stock
It's just really, really hearty that's why I like it thick
It looks great! and we just have a few garnishes
and we are set to eat We're going to put some of these
beautiful , vibrant diced yellow tomatoes right in the center
Add some chives that have been chopped and let's put on a crouton or 2
Give us something to dip it in There you go! That's beautiful!
