>> thank you, george.
We've got mary schreindorfer and
Sarah toof here today.
We are going to cook two
Recipes.
Not one, but two.
Maple pie and maple granola.
I have made a little granola but
I have never made a maple pie.
You are from fairfield, vermont.
>> yes, we are.
>> dairy capital, maple capital
Of the world.
>> i am going to start with the
Maple pie and we will go from
There.
>> sounds good.
>> i'm starting off with a cup
And a half of heavy cream.
>> i love how all of these
Recipes we are starting off with
Two tablespoons and light cream
And chicken stock -- we just go
All out.
>> the good stuff.
>> yeah, the good stuff.
>> we will whisk in a third of a
Cup of all-purpose flour.
And just whisk until it is
Smooth.
>> because you don't want it to
Get clumpy.
>> right.
>> so before it really gets
Cooking, get that whisked in.
This is like the -- i'm sure
There are like three french
Chefs out there like no, that is
Not -- they are just smoking
Cigarettes and complaining.
>> all right.
Now i'm going to add two
Tablespoons of butter.
>> okay.
>> and, let's see, a cup and a
Half of --
>> i can measure that off.
I am a good measurer.
>> whose syrup is this?
>> this would be my aunt eileen
And uncle gary's maple syrup.
>> they have fancy maple syrup.
Pretty packaging, and a big
Organic sticker on it.
>> they designed their own
Label.
>> it looks really nice.
>> very attractive.
>> is that a cup and a half?
>> yes.
>> if you want to just add that
In.
>> great.
And do you use medium, fancy,
What do you use?
>> i usually use medium, but
That would give a stronger maple
Flavor?
>> it just depends on your
Preference.
You can mix it up.
>> if you want even stronger,
You can use a darker grade.
>> i do know a couple of ladies
At the church in time, they do
Maple pie and they put a little
*** in there, too.
They like to mix it up.
Whatever your choice.
>> exactly.
>> we will get this going.
We actually need to add one more
Thing, quarter teaspoon of
Pepper.
>> it better be good.
>> it is.
It adds an extra little --
>> kick.
>> a little something, special
Ingredient.
>> i'm looking forward to fitryg
This.
Not the normal thing.
Then we add pepper.
>> should we get started on the
Granola?
>> sara needs to look a little
There on the stove.
We will make up the granola.
This is a nice, easy recipe that
Our family all loves.
Our children, now my
Grandchildren love it.
>> nice.
>> you start out with six cups
Of oatmeal, whole oatmeal.
>> for people who -- i just
Learned this the other day.
What makes good oatmeal and what
Makes bad oatmeal, when it is
Not all chopped up and mushy and
Not all frayed.
This is really good high-quality
Oatmeal.
>> good old-fashioned oatmeal,
Six cups.
To that we add a cup of
Sunflower seeds.
A cup of nonfat dried milk.
>> dried milk.
Always good for the power
Outages.
You have had it around for years
And now you can actually use it.
Half a cup of sesame seed.
>> are these toasted or straight
Up?
>> these are the brown sesame
Seeds.
>> i can't believe kids eat
This.
It is very healthy.
>> beyond healthy.
Very good for everybody.
Easy to make.
Children can help with it.
>> you can find all of this
Stuff at most bulk food aisles.
>> i add walnut, but you can add
Pecans --
>> cashews --
>> whatever your preference is.
Then i just mix those
Ingredients together.
>> i mean, for people who buy a
Lot of granola and have their
Favorite, the maple granola we
Are giving in the gift package,
It is a nice granola.
If you want to play around a
Little bit, making your granola
Is fun and you can customize it.
>> oh, yes.
You can add any number of dried
Fruits to it after, after you
Bake it.
You wouldn't want to add them
Now.
>> they do the burn thing, and
That is -- burnt cherries and
Raisins, not so good.
>> and then i add a cup of maple
Syrup to this.
>> all right.
And a cup of salad oil --
>> this helps when you cook it
So that it doesn't stick
Together forever.
I would say this much would last
In my family a week, maybe.
>> this much granola.
>> yes, we eat a lot of granola.
We love the granola.
If you keep it longer, that oil
Helps it break up, which is
Pretty good.
>> how is the pie mixture doing?
>> it is coming along.
A lot less clumpy, flour and
Protein content starting to
Break down.
>> starting to thicken up a
Little bit.
>> you can see why children
Enjoy making granola.
It is just the -- the -- this
Whole process is very easy.
>> yes.
>> they would love this stirring
Part of it.
>> my kids, in particular, love
To mix stuff but they love to
Eat stuff.
They are always eating raw
Cookie dough.
I'm always like hey, now a new
Generation of kids.
Apparently raw eggs will kill
Your children.
They are always super panicky.
They can eat it and you don't
Have to feel bad or freak out or
Anything like that.
>> that is pretty good.
>> great.
>> and we will put it on our
Baking sheet.
>> a very heavy-duty baking
Sheet.
That is what i like to see.
>> and depending on the size of
The baking sheet, it will affect
How long you will keep this in
The oven.
>> wow.
>> and what temperature do you
Bake this at?
>> 300 degrees.
>> for about how long?
>> anywhere probably from about
45 minutes to an hour in a
300-degree oven.
>> how do you know it is done?
That is always my big problem
With granola.
How do you exactly know when it
Is done?
>> every 10 to 15 minutes or so
I stir it.
Because you want it to be
Cooking uniformly.
And so turn it over, mix it up
Every 10 to 15 minutes while it
Is cooking.
And then watch for it to get a
Nice, golden brown.
And it will look crunchier.
>> i always think mine is done
When it starts to smell up the
Whole house.
I have no scientific way to do
Any bake good.
When you are watching college
Basketball, cookies are done.
Take off and do it.
Throw these in the oven.
>> in our brand new bouchard
Pierce oven.
Big props to those guys.
>> and we should have a finished
One in the magic oven.
>> the magic oven we will pull
Out the finished one.
Wow, this is great.
All right.
>> so, you can see the nice
Golden --
>> and you have been doing the
Stir up on it, nicely separated,
Too, which is great.
>> and then at this time once it
Is baked and cooled, you can add
Raisins, dried apricots --
>> dried apples, champagne
Orchard does the dried apple
Thing.
And dried cranberries --
>> you can add whatever your
Personal preference.
>> fresh fruits, blueberries.
>> blackberries.
>> i love them picked fresh in
The summer.
You can have it on yogurt or on
Your ice cream.
>> this is -- you know, eat it
In your car compared to stopping
At the gas station and picking
Up slim jims and something
Terrible.
>> nice and healthy and tasty,
Too.
>> this is good.
What would you store this?
A bag, container --
>> either a zip-lock bag or a
Glass --
>> they make big mason jars,
Too, and give them out for
Holiday gifts.
>> that's good.
>> i will give you a little bit.
>> you are already into it.
You are way ahead of me.
>> very, very very good.
>> thank you very much.
>> you're welcome.
>> that is really good.
Not too maplely.
It is a lot of everything in
There.
Nice, nutty, very flavorful.
>> you could use a darker grade
And give it a stronger, more
Pronounced maple flavor.
>> but whatever you are doing
Here, just do this.
Follow the recipe that is in
That book once you make the
Donation, it is worth every
Penny.
Now we have a pie crust.
This is a very delicate-looking
Pie crust.
It is not like the big behemeth
Goliath -- is it --
>> i have twin two-year-olds --
>> enough said.
You are free.
You can do whatever you want.
>> she is allowed shortcuts.
>> you are allowed many
Shortcuts.
>> we're giving out free spa
Appointments after this.
Most likely people will be
Calling in to make donations to
You.
>> i know.
>> once they find out you have
Twins.
>> premade pie crust, that's
Okay.
We forgive you.
>> sometimes you have to take
Shortcuts.
>> it is nice and thick my
Filling now.
>> yeah, it is really kind of
Ooey gooey.
Wow.
>> okay.
>> and everybody will fight to
Get their hands --
>> like a big family, everybody
Loves this when this happens?
>> oh, yeah.
>> every holiday you do this?
>> i do it for most holidays,
Yes.
>> if she doesn't do it does she
Get complaints about it?
>> people look for it.
And then i have a third of a cup
Of chopped walnuts that i will
Sprinkle on top.
>> for those who can't hear,
There are people who are right
Around the cameras, you can see
Them licking their lips and
Saying i really want a piece of
This pie.
I can understand.
You bake this for how long.
>> bake it for about, i would
Start watching it at 20 minutes.
At 375.
This takes 20 to 30 minutes, but
If you don't watch it, it starts
Spoiling and you -- boiling and
You can get your crust covered
With all of the filling.
Which is fine.
It just won't look as pretty.
It is not a horrible thing.
>> we will throw this in.
Magic oven, and pull this out.
Wow, that is pretty.
That looks pretty awesome.
Wow.
>> do you have a knife?
>> i don't know if we have a
Little knife.
We will figure this out.
How long does it pie keep
Around, a couple of days in the
Fridge?
>> yes, you should keep it in
The fridge.
It never lasts that long, but
I'm sure it would keep for a few
Days.
>> perfect.
I'm just going to chisel it out
Here.
That looks awesome.
And it is really gooey and
Creamy.
Hmmmm, wow.
All right.
So, i was worried about the
Black pepper but you don't even
Taste the black pepper.
>> enhances it.
>> it gives it like a more fully
Pronounced maple flavor.
>> yes.
>> which is ahhh!
The science of food.
Why does it do that?
It is delicious.
>> thank you.
>> it really is.
It is great.
Congratulations on having twins.
>> thank you.
>> thank you for coming out
And --
>> you're welcome.
>> maple, always our favorite
Episode to do of the year.
