Today I will be making muthias (steamed dumplings).
Made with cabbage, gram flour and mix of spices.
Very tasty and healthy treat.
Muthias can be served as an appetizer or snack.
This recipe will serve 4.
For this recipe we need:
1/2 medium size cabbage
which gives you about 4 cups of finely shredded cabbage.
1 cup of gram flour (besan)
2 tablespoons of whole wheat flour
About 2 tablespoons of chopped green chilli
2 tablespoons of fenugreek leaves
1/4 teaspoon of turmeric
1 teaspoon of cumin seeds
1 teaspoon of salt
1/2 teaspoon of sugar
About 1/8 teaspoon of citric acid
And 2 tablespoon of oil.
Now for seasoning, we need
1 tablespoon of oil
1/2 teaspoon of black mustard seeds
1 teaspoon of sesame seeds
4 whole red chillies
And about 2 tablespoons of finely chopped cilantro (hara dhaniya).
To make muthias, first we are going to mix all the
ingredients together and make a very soft dough.
The gram flour measurement take it as a guideline.
Sometime you need one spoon more or less
it depends on how moist is your cabbage.
Another thing the fenugreek leaves if you don't have fresh
you can substitute with dry leaves
which is also known as kasuri methi.
Or substitute that with the green cilantro (hara dhaniya).
After the steam these dumplings, to give the final touch
we will roast it with spices.
it taste and smells just great.
So first we are going to put the cabbage in a bowl.
Flour
Green chillies
Fenugreek leaves
Turmeric
Cumin seeds
Salt, that you can adjust to your taste.
Sugar
And citric acid.
And oil.
Mix it together.
And now we are going to add the gram flour (besan).
About half.
It's coming together and you can use some more gram flour.
So as you see this is very soft texture dough
but it's hard enough that it will hold together.
Heat is on, medium high.
And I am using the wide pan.
And I have put about half an inch of water.
After water boils, you put the vegetable steamer.
I am just using the simple vegetable steamer.
And I have greased it little bit.
So I am going to put right in the pan.
Take about 2 tablespoons of mixture
and put right over it.
And they should steam about 18-20 minutes.
And do grease the fingers before you start taking these dough.
I boiled the water on medium high
and inside the vegetable steamer which I have already greased.
And put all the muthias over.
And I am going to steam them for about 18-20 minutes
and it should be covered.
And reduce the heat to low medium.
This has been about 16 minutes.
So I will check if they are ready.
So we will use the fork to check it exactly the way you do the cake.
You put in it should come out clean.
I think just maybe another minute and this will be ready.
You can eat the muthias without stir frying just when they are hot
with green chutney they still taste very good.
I will check it again it has been another 2 minutes.
This is done.
So it took me about 18 minutes
the time I steamed.
So I am going to take them out from steamer
and let it cool off little bit.
And then going to slice them in two.
Muthias have cool off little bit and now I am going to slice them in
2 pieces, before I stir fry.
After you slice them you can refrigerate them
before stir frying for a week or freeze them for couple of months.
Heat is on, medium high.
Going to add the oil.
And wait little bit so oil is little hot.
Going to add some mustard seeds.
After mustard seeds crack, I am going to add the red chillies
and sesame seeds.
Mustard seeds has started cracking.
It's time to add the chilli
and sesame seeds.
Just stir for few seconds before we add muthias.
Going to add muthias.
This is one of my favorite snack.
You can smell the fenugreek.
It has a very sweet smell.
Sweet and bitter smell.
Stir fry these for about 2-3 minutes.
So this has been about 3 minutes.
If you want more golden brown you can do one more minute of stir frying.
But I just like the touch of the golden brown
on it and they look really good.
Usually cilantro is garnished in the end after you have in serving plate.
But I like to add it right in the pan
and after I close the heat so skillet is still hot.
And just stir it.
And how nice they look.
And they are ready to serve.
Muthias are looking very yummy
and smelling good.
This makes a great appetizer.
Or it's one of my favorite snack.
I am going to serve this with cilantro chutney.
