Okay now that we have prep our spices we are going to take the bowl of chicken right here
and we are going to use white sugar. Which is a key element in the marinade because it
is going to tenderize the meat and it is going to give it a nice flavor. With about 2 teaspoons
of white sugar to about 3 quarter to a pound of chicken you know what 2 in a half. I'm
going to take out my glove which I love to use right here and I really like to mix the
meat up by hand because you can really feel every nook and cranny and coat all that sugar,
mush it around. This is where if you where going to do the barbecue style then this is
really using your hand get all those flavors into those nooks and crannies you made by
scoring the meat. Just mix that up and we would get ready for our next ingredient.
