To select salmon you want to find salmon that's got a nice peach color to it. Sometimes it's
a little darker peach and sometimes it's a little lighter peach. It just depends on the
salmon. You also make sure the texture, when you touch it, is that it bounces back. It
shouldn't be mushy at all. This is a nice fillet of salmon and you want to make sure
that your fillets don't smell like fish. It should smell like the sea. If it has a fishy
or an ammonia scent to it then it's probably old. And that is how you select salmon.
