Hi foodies, I'm Yuda Bustara
Today I'm going to cook Taiwan Fried Chicken
First of all, we should make the marinade sauce
Mix soy sauce,
Sugar a bit,
Then rice vinegar
You can substitute with apple or grape vinegar
Or whatever vinegar you have in your house
Then, there is chili powder
Last and the most important,
Because this is originated in Taiwan, so you need five spice powder
Or in Indonesia, it's called by "ngohiong" powder
It will gives distinctive flavour of Taiwan cuisine
Mix all together
Five spice powder is made by 5 spices
There are cinnamon, cloves, and et cetera.
Now we'll proccess the chicken,
Because of the shape of Taiwan's chicken is large, so we have to flatten the chicken first
And here is the technique,
I got chicken breast fillet here,
Open up the chicken to butterfly
It'll looks like this
Now we'll pound the chicken so it'll become larger
To keep the chicken clean, place parchment paper
Then pound it
Okay, open the paper
Taraa, it will flat and thin like this
Now it's time to marinade the chicken
Pour the marinade sauce into a tray
Place the chicken, but you've to be careful because it's so thin
Marinade for 10-15 minutes
Don't marinade the chicken overnight,
Because the sauce contains vinegar, and it will make the chicken cooked
I already prepared fry ingredients
First, wheat flour,
Beaten eggs,
And tapioca flour
Coat the chicken with wheat flour,
Then eggs,
Last, tapioca flour
Then dip the chicken into heated oil about 180 degree celcius
As you can see here,
The coat of the chicken is white. Why?
Because tapioca will not change its color to brown
So it's okay
Now we want to make the flavour
Usually we found barbecue, cheese, and seaweed flavour
Now I want to make a real Taiwanese flavour
There is five spice powder, 1 tbsp of it
Chili powder
And I'm adding sugar to make the flavour more savoury
Mix by your hand
Season with salt
Then, we'll cut the chicken and pour the flavour over it
