On this episode of Market Fresh,
we're making Gaeng Hang Lay or Northern Style Pork Curry.
We start our shopping trip with a visit to our favorite butcher,
who prepares a choice cut of pork for our curry.
We're at the Bhan Toom Market, which is our small neighborhood market.
We love shopping here because we can usually find everything we need in such a small space.
We do make a quick stop at the Banglumpoo Market for
some Gaeng Hang Lay Curry Paste before heading home.
The main ingredients for our Gaeng Hang Lay are pork,
Gaeng Hang Lay curry paste, Hang Lay curry powder, ginger,
tamarind paste, garlic and thick soy sauce.
As always, we start cleaning and preparing all the ingredients.
In our mortar we make our curry paste.
We pound some chilies, lemongrass, garlic, and shallots with our pestle.
Then we cut up our pork and mix it with some thick soy sauce before adding the curry paste.
We'll let that marinate for about an hour before we cook it.
When it's time to start cooking, we add our pork mixture into a pot on low heat.
We stir the meat until it's almost cooked and then add some water
and cover the pot to let everything simmer together.
After it's been simmering for a while, we add in our ginger,
garlic, and curry powder and let it all cook for a bit longer.
You can flavor the curry with condiments and
sauces to get the 3 main flavors: sour, sweet and salty.
And there you have it – Gaeng Hang Lay or Northern Style Pork Curry.
