Welcome to BBQ pit boys dot com!
Today we're going to do some bacon cheese wings on the grill. Alright, they're
easy to do.
Here I got the grill set up for indirect heating - charcoal of one side.
And here's some aluminum foil.
That's going to help for an easy
clean up after using some bacon on this grill, alright!
Here I've got about
four pounds of chicken wings.
Tips are on.
That's the way we like to cook them.
The one who take the tips off chicken wings have no idea that there's some good eating right there.
And you're going to need about
maybe three-quarters of a pound of bacon.
This here's American style pork belly bacon. It's a thick cut. And you want to use
a thick cut bacon whenever you get a chance.
And of course you're going to need some cheese. And here I've got about a half a pound of Cheddar cheese.
You can use what cheese you like.
And here we've got some salt, pepper
and some granulated garlic.
You want to season up your wings first.
You season them the way you like.
Let's get these wings on the grill.
Now again we're going to line up these chicken wings opposite of the hot coals.
And we're going to
pack them in there fairly tight.
You'll see the reason why here. We want to get that bacon going on there, too.
Now you want to make sure you make a lot of these.
There's a guarantee there's not going to be any leftovers.
Man, there's nothing like Bacon Cheese Wings on the grill! You gotta check this out!
You just pack them in there pretty tight.
Now here is the magic to this recipe. We're going to take this
thick cut bacon
and we're just going to lay it on top of these wings.
Now you know where we're going with this.
That bacon fat is going to slowly cook down over those wings.
It's going to add a real good taste.
And it's going to keep these wings nice and moist.
Now here we're going to add a little bit of chunked wood.
We're going to add
a real light smoked flavor
to these wings.
And I used a little bit of apple wood there but use your
favorite kind
of hard wood for smoking up these wings.
Alright, now we're going to be about 275 - 300 degrees fahrenheit.
It's going to take a little over an hour.
Alright, about a half hour has gone by.
And things are looking real good!
The bacon is slightly smoked
and the wings are ready.
Man it smells good!
About another half hour to go.
Alright!
We're about an hour into this
and this is when you want to take your
shredded cheese.
Pour it in a bowl.
We're going to use about 1/2 pound to these 4 pounds of wings.
You can use a little bit more if you want.
Take a look at that!
It's good enough to eat already.
This is were we're going to take off this bacon.
The bacon has been nicely smoked.
The hardest part about this part here is
you want to take some of that and make yourself a bacon sandwich.
But no, you want to keep it for the wings. Alright - we'll put the cover back on while
we're preparing this.
We're going to take this bacon and we're going to chop it up in small pieces.

Alright, I don't need to show you any more of that.
Now you want to take that chopped bacon and throw it into that shredded cheese right there.
Give it a good mix.
Man, I could just eat that right there!
Now you want to take this bacon and shredded cheese and layer it all over on top of
these wings.
Are you getting hungry or what?
This cheddar cheese here is going to melt all over these wings.
Alright - about another 10 more minutes.
Oh yeah, for all you food police out there complaining about
you don't see us wash our boards enough. We always bring our boards down to the creek
and give them good washing.
But I'll show you cleaning the board just to make you happy.
These Bacon Cheese Wings are done!
Take a look at that!
Just before I'll pull them off that grill, we're going to make some hot sauce.
This here is optional of course.
If you don't want any of that hot wings, then that's alright and you just serve them like that. But we like to serve our wings with some hot sauce. So here I'm taking about 4tbsp of butter.
And you're going to take about 1/2 cup of your favorite hot sauce. And we're going to heat it up and melt it all down. Just takes a couple of minutes.
Alright, that hot sauce is ready!
Now let's get these wings off the grill.
You're going to be pulling off three or four at a time here.
Because all that cheese has
melted on their real good.
Now I guess I could fast forward this part
taking the chicken wings off the grill.
But I kinda like doing this. And hell - I'm not going nowhere!
Do you smell that?
It smells good!
Alright, now we're going to take some of this hot sauce here
and we're going to pour a big scoop or two all over these wings.
Now of course you could serve the sauce on the side in a separate bowl. But this is the way we like to eat our wings here around at the Pit.

one of these right here in front of you!
