Today we are going to make gram flour masala paratha.
We will make the paratha by preparing a gram flour stuffing and filling it inside a plain paratha.
These parathas are very delicious.
So come, let’s start making gram flour masala paratha.
Wheat flour (Gehu atta) - 2 cup
Gram flour (Besan) - 1 cup
Oil - 4 to 5 tbsp
Coriander leaves (Hara dhaniya) - 2 to 3 tbsp (Finely chopped)
Asafetida (Hing) - 1 pinch
Cumin seeds (Jeera) - ½ tsp
Green chilly (Hari mirch) - 2 (finely chopped)
Ginger (Adrak) - 1 inch (Grated)
Mango Powder (Amchoor powder) - ¼ tsp
Red chilly powder (Lal mirch powder) - ¼ tsp
Coriander powder (Dhaniya powder) - ½ tsp
Salt (Namak) - 1 tsp or as per taste
To make gram flour masala paratha, the first thing that needs to be prepared is the flour.
Add ½ tbsp salt and 2 tbsp oil to the flour.
Mix it well.
Keep adding a little water and knead the flour to make parathas.
The flour is soft, and ready.
We have used less than 1 cup water to knead this much dough.
Cover the flour and keep it aside. Within 15-20 minutes, the flour will get fluffy and will be set. Then we will make parathas.
Till our flour gets ready, we will prepare the stuffing.
Heat a pan.
Add 2 or 3 tbsp oil to it.
Once the oil gets heated, add asafetida and cumin seeds and let it roast.
Add coriander powder, green chilly and ginger.
Now finally add the gram flour to the pan.
Keep stirring and roast the gram flour.
Turn the stove on medium flame.
Keep stirring to make sure the gram flour doesn’t stick to the bottom of the pan.
The colour of the gram flour has changed and we get a fragrance from it.
Our gram flour is roasted.
It will take 6 -7 minutes to roast the gram flour.
Now add red chilli and mango powder to it. Mix well.
Add coriander leaves and salt.
Add little water to it, so that the gram flour gets bound.
Instead of water, we can add curd as well.
Keep stirring and roast the stuffing for another 2-3 minutes.
Our stuffing is now ready.
Take it out in a plate, so that it cools.
Our flour is also ready.
Take some oil on your hands and spread it evenly.
Also apply some oil on the fluor and press it hard.
The dough is now soft.
Now we'll make the parathas.
Take some dry flour.
Break a ball from the dough.
We can roll either big, small or medium sized parathas as per our choice.
We are making medium sized parathas.
Roll it in a ball having the size of a lemon.
Press it this way.
Take the rolled out parantha, and put it on the dry flour.
Roll a disc of approximately 3-4 inches diameter.
Put oil on the paratha and spread it all over it.
Add 2-3 tbsp gram flour stuffing in it.
You can add the stuffing as per your choice.
We will add 2-3 tbsp stuffing.
Lift up the parantha from all four sides and close the stuffing.
Press it tightly so that the stuffing spreads evenly.
Now wrap the parantha in dry flour.
Roll it softly. Do not make it too thin. Filled paranthas are a little thick.
Our paratha is now rolled out.
The pan is hot now.
Put oil in it for further heating. Spread the oil evenly to all sides of the pan.
Put the parantha in the pan.
Till then let's roll out the other parathas.
Let it cook for sometime and then turn it over to cook from the other side.
Put oil on the first side of the paratha and apply evenly all over it.
Change the side of the paratha.
Now apply oil on the other side as well.
Press the paratha from both sides till it gets fried and its colour changes to brown.
The paratha is now brown in colour.
Serve the paratha on a plate.
Hot paratha when served directly from the pan is very yummy.
Our parathas are now ready.
We have prepared 7-8 parathas from this much dough.
Gram flour masala parathas are now ready.

They can be eaten for breakfast or dinner.
