Hi, I am Kate and welcome to my series Kate's Kitchen. I am cooking some delicious and simple
dishes for you to make. Today I am going to be making prawn and courgette pasta, which
is a really simple, but super tasty dish to make.
[music] So I am going to start with the spaghetti.
I have got a pot of boiling salty water. I am just going to go ahead and pop this in
here. Make sure with dried spaghetti that you sort of pop it around the edges so that
it evenly cooks, and that is going to take about eight to ten minutes because you want
it to have a bit of an al dente, which is a bit of a bite to it once it has cooked.
So whilst that is bubbling away, I am going to start by cooking the courgettes in some
olive oil on the pan. So you just need a good glug. I use four really big courgettes, but
if you have small ones and use five, that is fine.
My pasta is cooked, so I am going to take it off of the heat and drain it. But before
that I am going to get a little cup, a teacup here, and reserve some of the water that it
has been cooking in, just to give the dish a bit of moisture. Now a great trick with
pasta is that if you finish cooking it before you have actually mad your sauce like me,
you can put it back into the pan and actually just add a little bit of olive oil to it and
give it a coating so that it does not stick together. So just keep an eye on your courgettes.
Keep turning them in the pan until they have all got a nice brown color to them. So once
they have started to brown off like you can see here, I am going to go ahead and put in
two cloves of chopped garlic and two finally sliced red chilies. Give that a stir. So if

in the description box below. So once that is all mixed in, I am going to grab my prawns.
These are uncooked prawns and pop them in until they are cooked. That will go nice and
pink and juicy. So once these have turned pink, you can just take the mixture off of
the heat, and I am going to add the juice of half a lemon to it as well. Put it through
my hands. We do not want to get any of those pits in there. So we are going to go back
to our pasta that we got earlier so as you can see, it is nice and separated still so
I am just going to pop it in using some tongs now. So when mixing this pasta in, just make
sure that it is coated with lovely flavors from the prawns, the courgettes, the lemon,
the garlic, and the chilies. So if you think that it is a little bit dry like I do I tiny
bit with mine, I am going to get some of that water I kept behind earlier and just pop some
of that in, and to that I am going to add a good fistful of parmesan cheese and let
that melt in. Once you have done that, you take about the same, so a good fistful of
parsley. If you want to you can use dill. I really like the look and the taste of parsley
and just mix that in as well. Once this is all mixed in, I am just going to grab a serving
plate. I have got a big plate here and pop it all on it. Then I am just going to season
it a little bit with some pepper and of course a little bit of salt. I am just going to sprinkle
a little bit more parsley. If you want to, you can add a little bit more cheese or you
can just get people to put it on their own dish if you want to. So that is my courgette
and prawn pasta. I love it because it takes literally twenty minutes to make. So I really
